Soup Recipe
I've been trying to get more vegetables into our diets. Everyone always talks about making soups. I found I was picky about how the soup tasted, and didn't always like recipes I found. I finally found (in my opinion) a really delicious vegetable soup recipe. I made it last weekend, and had enough to share with my neighbors, Nan and Jim Bailey. Nan liked my recipe so well, she shared some of her recipes. That's where I found my FAVORITE soup recipe to date. It's Chicken Tortilla Soup. To make: Using a Dutch Oven, warm 1 tsp olive oil over med-high heat. Add and saute until soft, 1 c. chopped onion and 2 cloves minced garlic. Add: 2 c. shredded, cooked chicken breast(I used the Tyson precooked bags of chicken, or leftover chicken), 1 c. frozen kernel corn, 1/4 c dry white wine, 1 T chopped jalapeno pepper (I use a whole jalapeno), 1 t ground cumin, 1 t Worcestershire sauce, 1/2 t chili powder, 2 (14.25 oz) cans chicken broth, 1 (14.5 oz) can diced tomatoes, and 1 (10.75 oz) can tomato soup. Bring to boil, then reduce heat, cover, and simmer for 1 hour. Ladle soup into bowls; top with tortilla chips and sour cream. Yields: 8 servings (1 cup each) DELICIOUS!
