1 can Black Beans, washed & drained
1 can Shoe Peg corn, washed & drained
1 can Rotel tomatoes w/chilies
3/4 cup diced red pepper
3/4 cup diced yellow pepper
1/2 cup diced green onion
1 cup diced fresh tomatoes
1/4 cup red wine vinegar
1/8 tsp each: cumin, cayenne pepper, chili powder, garlic powder
1 clove minced garlic
Marinate all for a few hours and serve with tostito chips.
