This is the preparation for the Leek, Potato a& Chestnut soup we learned how to make at our Italian cooking class. We made the soup twice, once before we were able to find chestnuts (they weren't available here until Friday before Thanksgiving week), and then again after we could find chestnuts. We did not have company for this meal, as we had 30 cm of snow!
